Your Beef, Step by Step
At Iron Wood, we believe buying beef should be straightforward, personal, and exceptional—just like the product you’re getting.
Once one of our Angus-Wagyu steers reaches peak maturity, it’s humanely harvested at a USDA-inspected facility. From there, the beef is dry-aged for a minimum of 14 days, allowing the natural enzymes to break down muscle fibers and concentrate the flavor. The result is rich, tender beef with deep, steakhouse-quality character.
When you reserve your share, you’re buying a portion of the whole animal. You pay based on hanging weight—the weight of the carcass after the head, hide, and internal organs have been removed but before cutting and packaging. It’s the industry standard, and it ensures you're getting premium, ranch-raised beef at exceptional value.
We’ll work directly with you (or the butcher will) to customize your cuts—you choose your preferred steak thickness, roast sizes, and even which cuts you’d like more or less of. If you'd rather keep it simple, we’ll default to the butcher’s expert standard cut sheet. Each cut is double-wrapped and flash-frozen to lock in freshness and quality.
Once everything is packaged and ready, your beef is either delivered straight to your door—at no additional charge—or made available for pickup at your convenience.
